Sourdough Wholewheat Focaccia 
or Focacia della Terra, a recipe I learned from Wayne Caddy workshop. 
This focaccia is made with almost 30% wholewheat flour.
It has a bit of nutty, earthy flavor from the wholewheat flour.
It pairs very well with your favorite after-hour drink 😉 
 
Long slow 24-hour fermentation makes this bread very easy to digest. 
 
Dough weight: 700 grams. 
Ingredient: Unbleached bread flour, whole wheat flour, dark rye flour, extra virgin olive oil, water, salt
 
Tomato & Olive topping: tomato, black olive, rosemary, garlic 
 
Bake and Ship every Tuesday and Friday
